The adventure wine cellar “Prisoe” begins at year of 2000, when the ex-oenologist of Center Wine Cellar Euxinograde, Rumen Baltadjiev has returned from a visit in the German wine region of Franken. He was surprised by the numerous small and medium sized wineries, which produced high quality wines using traditional technology from local grape varieties. The future manager of “Prisoe” ltd. manages to convince his wife to dive into the magic of vine and wine as they begin to make plans for their own winery.
The first steps of the wine business happen in rented building in the village of Slanchevo. Despite the harsh conditions for work and development there, the love and passion for the wine are the main reasons for continuing the dream “Prisoe”. This is the moment in which you should get to know what Prisoe means.
It’s an old Bulgarian word used to describe an open, sunny and warm place. Such is the land on which are the winery and the vines, surrounded by acacia forest with permanent sunshine and close enough to the sea so you could feel the sea breeze during the summer. The soil is particular symbiosis between the fine white sand of the former seabed of the “Fossil forest” and the powerful blackearth soil of Danube plain. On this golden land during the hot summer of the year 2005 begins the construction of “Prisoe” winery. In 2007 first vines from Chardonnay are being planted, followed by Carbernet Sauvignon and Merlot. The vineyard is maintained only by the family so each vine could receive the maximum attention necessary to fulfill its potential. After four years of relentless labor and effort the first vintage is on its way. The idea behind which the winery is made is to preserve the traditions and technologies used by our ancestors to make wine. To achieve this the fermentation of red grapes is in 500 l casks and the fresh wine ages in 500 l barrels. The must from Chardonnay ferments and ages in similar barrels. Following this type of technology allows us to make specific wines with their own character and capable to impress.
